So on rare occasions I come up with a recipe on my own that is pretty enough and yummy enough to share with you all! As always, my meals are parent friendly: easy, quick, nourishing, and easy to cleanup!
A couple tools I suggest that will make this entire process easier is to use a wok because it acts as a large pan but makes it so easy to stir in the ingredients because of it's high edges! And if you really can't cut onion (like me) chopping it into 4 big chunks and throwing it quickly into a food processor makes the experience far less...stingy! haha! The same goes for cheese! A food processor can literally cut a lot of time out of shredding cheese.
So let's get started!
2 bell peppers
3/4 cup quinoa
a drizzle of cooking oil (I used grapeseed oil)
1 large yellow onion
1tbsp crushed garlic
1 cup mozzarella (or a dairy-free alternative)
1 9oz can/jar pizza sauce
Boil the quinoa in 1.5 cups of water. Put to side.
Drizzle your wok with some oil. Sautee your chopped onion and crushed garlic until the onion is golden. Stir in your chopped zuchini. Add the quinoa and pizza sauce and stir until coated. Sprinkle some cheese in the filling (but not too much because you don't want to create a sticky cheese ball!)
Cut your bell peppers from the top and seed them. Stuff the peppers with your filling and sprinkle some more cheese on the top. Put the "Lids" or pepper tops back on and place on a baking sheet. Roast at 350 for about 30 mins or less.
Use the extra cheese to add to the filling because there will be a lot of extra filling. In my opinion the filling was the best part! But the pepper was tasty and made it a fun way to eat with your hands...like a pizza!
