Here is a SIMPLE recipe for RAW CARROT CAKE PROTEIN BALLS that you can whip up in minutes. They are super great plain but I do like to dip them in just a teeny tiny bit of white chocolate. GUILTY!
This is also a healthy alternative to other finger food snacks that are out there, especially for kids and teenagers too!

INGREDIENTS AND DIRECTIONS:
IN A FOOD PROCESSOR:
TOSS IN 2 CARROTS (SNAP THEM IN HALF AND DON’T EVEN PEEL ‘EM)
⅓ CUP OF RAISINS
½ CUP OF ALMOND BUTTER (OR OTHER NUT BUTTER)
1 CUP OF ROLLED OATS
½ TSP CINNAMON
¼ TSP CLOVES
½ TSP NUTMEG
2 TBSP RAW HONEY (OR AGAVE NECTAR, MAPLE SYRUP, ETC)
2 TBSP PLANT MILK (I USED CASHEW MILK)
¾ CUP WHEY PROTEIN (I USED USANA PROTEIN POWDER BUT YOU CAN ALSO SUBSTITUTE ALMOND FLOUR)
IN A METAL BOWL THAT IS FLOATING INSIDE A POT OF WATER (SET TO A LOW STOVE TOP TEMPERATURE ADD:
¼ CUP WHITE CHOCOLATE CHIPS (I USED THOSE BULK BIN WIDE AND FLAT ONES)
1 TSP COCONUT OIL (THIS MAKES THE CHOCOLATE CREAMY)!
WITH CLEAN HANDS, SIMPLY ROLL THE “DOUGH” INTO BALLS AND THEN DIP INTO THE CHOCOLATE AND PLACE ON A PAN OR BAKING TRAY TO DRY. REFRIGERATE FOR A FIRMER BALL...
